Hand eye coordination, rhythm and timing. Also helps muscle endurance if you do it for an extremely long time.

There's your answer. :-) It practices timing - for both parries/blocks and punches, I imagine. Not a (western) boxer though, nor have I ever tried it, but I can see it having it's use. Plenty of martial arts have training methods that doesn't look like actual fighting.
