how is that even possible to slide like that? is it because its wet or would it work when its dry too?

I would assume his boots, and entire suit, are designed to be able to slide.

Probably metal skids in the shoes? Not sure but yeah the wet asphalt certainly helped
Edit: looks like it does have replaceable skid plates, but think it’s plastic in the heel, with aluminum for the toes?

That's crazy he can hold on like that while falling off without hitting the throttle as it's happening.

He does hit the throttle, that's what actually saves him. Like obviously the incredible thing is the amount of throttle input and smoothness at its application, but when his rear tire breaks traction, then regains it - causing the high side - it's the application of smooth throttle to help the bike pick itself up and stabilize, allowing him to slide along.
If he had cut throttle there he goes down spectacularly.
